Introducing the first cocktail release from our JAM Cocktail series, our take on the classic Singapore Sling. Trialled and tested by the JAM Wives!

Ingredients:
– 45mls Signature Gin
– 30mls Chambord (Raspberry Liquor)
– 30mls Triple Sec
– 10mls simple syrup (to taste)
– Splash of Bitters
– Soda water
– Ice

Method:
1. Pour the Signature Gin, Chambord, Triple Sec, simple syrup and bitters into a cocktail shaker over ice. Shake well (you know the drill).

2. Pour into a martini glass, top with soda water and stir gently.
(optional: Ring the glass with sugar before hand, if that’s your thing)

3. Sit back, take a sip, feel the warmth and think about how much you love JAM Distilling’s Signature Gin.

2023 Here comes the JAM

This time last year we were excitedly finishing our final recipe tweaks for the much anticipated first release for JAM Distilling with our Signature Gin.
2022 was an incredible year for us, and with much hard work we achieved all of our small distillery goals:
✅ Release our first gin
✅ Fill our first Whisky cask
✅ Find a Gawler pub to stock our gin behind the bar (thanks Prince Albert Hotel!)
✅ Release 4 gin batches in 6 months
✅ Market stall debut
(A personal note: it is an amazing feeling to walk into your local home town pub and see your own spirits lined up with the other bottles behind the bar! Something I imagine is like what a musician feels when hearing their music played on the radio for the first time).

So what do we have installed for 2023 you ask?

Well, our batches are getting bigger – which means more gin for you! But also, we’re working right now with some new gin recipe ideas, and we think you’re just going to love it.
The freedom that comes with a small craft distillery means we can get really crafty with ideas, and we’ve got some special things brewing.

We’re also thinking more and more about whisky; grain varieties, specialty malts & casks. So of course we’ve had to do loads of taste testing research to make sure we’re heading on the right path 😉.
We’re extremely excited for the future whisky releases we’re working on, but great things can’t be rushed…

This little JAM went to market…

A warm summer’s evening and clear skies greeted the JAM crew last Friday night as we joined fellow local stall holders at Gawler’s Prince Albert Hotel twilight Christmas market and ventured into the public spot light for the first time.
It was simply magnificent to have the opportunity to tell the JAM story, greet new friends, chat about gin and whisky, and spread the good word on JAM spirits.

Market goers were treated to loads of handmade items and Xmas gift ideas as they perused the stalls with a drink in-hand with live music and a setting sun. Even better, was seeing people drinking JAM Signature Gin and telling other people to try it!

The Prince Albert Hotel has become JAM Distilling’s second HQ, and you can still grab yourself a Signature Gin over the bar! While stock lasts!

Whisky Market Chickens

It’s been a while between JAM blogs.
And JAM social media has been pretty quiet lately…
You must be wondering, “What has JAM been up to?”
Well, we can tell you we’ve been busy, like really busy.

WHISKY
All JAM Distilling supporters would surely know that a huge part of the JAM Distilling dream involves Australian single malt whisky. So guess what, we’ve started brewing and preparing the bond store to slowly mature our first whisky cask.
We can imagine, somewhere in Kentucky USA right now is a cooper dragging one of their bourbon single-fill American oak casks over to their shipping yard and slapping a ‘Deliver to JAM Distilling Australia’ sticker on the side and waving farewell.
We can’t wait to meet it.
Even more, we can’t wait to throw our JAM Single Malt new make whisky spirit into it. Which, of course, won’t be a run of the mill whisky. We’ve been building our own signature JAM grain bill that can craft our own unique single malt distillate.
More on that later…


MARKETS
Don’t worry yourself – Our first child (Signature Gin) is not being neglected as we shift focus to whisky. We’ve managed to squeeze a batch of 2-row SA barley through the mash tun and are applying our (now very familiar) triple distilling techniques.
And – we’ve listened.
We know that people have missed out on our first gin releases. So we’ve changed our approach this time to making market-ready grab-and-go 200ml bottle sizes. Perfect to take for an afternoon catchup with friends.
So keep your eyes peeled on our socials for some local market events we’ll be hitting real soon coming into Gin season! (AKA spring & summer).


CHICKENS
Pretty obvious right? Gin, whisky, and chickens. 🐤
Well for a grain-to-glass distillery that creates its own base spirit from scratch, yep, you get to know your local chickens. We are proud of our waste management practices. All our waste products are high in nutrients, and end up on our sweet green lush lawns (and the neighbours have noticed 👀).
But the spent grain (used during the mashing process) has another destination.
Some local hobby farms have been enjoying some free feed, and some of our biggest fans are now of the feathered variety!
So we were very pleased to hear when our sponsored JAM chickens had produced some offspring:
Introducing, Juniper, Rose-Bud, Coriander, and Citrus-Peel.
We’re not sure if they’re thrilled with their names – but we definitely are.

We were so incredibly blown-away from the amazing feedback we received from batch 001 – thank you all! We love bringing this gin to life, and the story it can tell. So we decided to change absolutely nothing to our recipe leading into batch 002.

Our Signature Gin is a true grain to glass small-batch craft spirit. Made from South Australian barley, and market-foraged botanicals from around the local markets and fruit sellers. This batch even features some locally grown citrus we received for batch 002 from a local’s backyard tree. All prepared by hand.

Expect brilliant bursts of citrus, complex earthy spicy notes, and a hint of floral that will mix nicely with soda water or a quality tonic. Best enjoyed with good company.

Introducing: Distiller Ben

Hmm… How would I introduce myself?
My name is Ben (easy – check one ✅)

What do I do for a living?

I fix things!

It would be easy to say I am a fly-in-fly-out diesel mechanic who answers frequently to “Copy Fitter” and swings spanners and hammers to keep the fleet moving, but that’s not all I mean by it.
I love to know how things work. Why they work, and how I can make it better. Which is why when my, all round good guy, mate Tim invited me to join him in unmasking the cogs behind the creation of the infinite possibilities of distillate creation, flavour bindings that promote treasured moments, long lasting memories and those times where you turn to a mate and your eyes are just screaming “this is good!”

All I could say was “I’m in”.

I’ve always felt instinctively driven to provide. Whether it be for my daughters to help them grow up strong and confident. Or my wife when she needs a hit of my positive optimism. A friend who needs a helping hand. Or a jumbo that needs a carrier hose on a hot, muddy decline (sorry for all the mining terminology). My point is, it’s in my nature to give the world my best, and with the team here at JAM Distilling, I think I’ll get to.

Quality, not quantity.

Despite already being a nano distillery, Here at JAM Distilling we’ve taken a very strong handed approach towards delivering something that we’re absolutely proud of. We’ll never sacrifice on flavour to increase our output. What you can expect with every dram is pure quality made from hours of what I like to refer to as “helicopter parenting”. Every drop from our still is monitored throughout our process which guarantees were getting the best out of our spirit. It’s a labour of love that you too will soon get to discover.

‘Excited’ doesn’t come close to describing how pumped we are to announce our first release! We are beyond happy to be able to (finally) let our Signature Gin out into the world and make our entry in to the Spirits Industry.
⭐Years of dreaming about our distilling vision.

It’s our Signature Gin, because it encompasses everything we love in a gin. It’s been made the way that we wanted to make it: Grain to Glass.
We have used local South Australian 2-row barley to create our own base spirit to launch our citrus-forward botanicals profile, all prepared by hand. Our gin is deliberately non-chill filtered, meaning we preserve all the exciting botanical oils in the spirit, but it may turn a little cloudy when adding mixers or ice.
This small batch makes a big impression, and we’ve poured our hearts into making it.

Introducing: Distiller Tim

From Navy sailor, to JAM Distilling Co-Founder & Co-Head Distiller.

Maybe it’s a Navy thing? But there’s some real magic in those moments when you re-connect with family and friends after spending a long time away. To get out a special bottle of whisky, wine, gin or some beers that you have been saving, pour some glasses, and spend some time catching up and sharing stories. For the average sailor, you’ll immediately pickup where you last left off with the conversation, and carry it on with as much gusto as the last time you were together. You’re enjoying more than just a drink together, its a deeper smile on your face and a real connection.

“Imagine if I could bottle this feeling?” I think to myself as I throw a few words into a google search: “how is whisky made”…

Ahoy JAM followers, allow me to introduce myself!
I am a proud South Australian, beer homebrewer, BBQ aficionado, sports enthusiast, and all round good guy. Joining the Navy straight out of High School when I was 17, I got to do all the usual Navy things: travel the world, move all around the country, countless deployments, and dream of starting a distillery.

I was always drawn into the world of flavour with beer and spirits. Wondering how certain flavours were achieved or influence each other. For years I’ve been experimenting with homebrewing different beer styles to entertain friends and neighbours (mostly with great results… not always). But, without fail, I have the patience to wait for a specific result, and the patience to fail in order to get better next time. I even grow my own hops at home to learn more about the flavours they can produce and affect beer styles.

You can probably see how all this lead to starting a distillery… That google search all those years ago seeking to know how whisky is made, eventuated in the purchase of the reliable Coopers homebrew starter kit (plug for South Australia) to get started making some beer. It wouldn’t be long before the homebrew equipment would get more serious and would eventually turn into all sorts of gin and whisky experiments – credit to JAM Co-Founder Ben and his relentless positivity.

When I get to catchup with a few particular mates and family, there are certain bottles that we simply must have. They have stories connected to them now, stories about Navy adventures and deployments, conquering tough-times together, workplace escapades, spontaneous holidays and camping trips, or simply periods of life. But in those moments of clinking glasses, we are holding a special kind of energy in our hands.
There’s real magic in those moments…

I am sure JAM Distilling will produce amazing special occasion spirits that will proudly be brought out and shared in those special moments and catchup gatherings with the greatest of company. And be a part of making something new.
It’s what we’re all about.

Signature Gin – Sneak Peek 👀

Well it’s mid-April and still no JAM gin release… But! we are very very close to finally sharing release 001 with the world and here is an exclusive sneak peek!

We’ve been held back by all the standard things: Covid-19, slow postage and shipping, family life, Godzilla attacks, full-time work commitments etc.

In the background we have been finalising small tweaks to our gin recipes with some micro batches and experiments. Did you know that JAM Distilling is making our own base neutral spirit for our gin? Whilst some distilleries order this in, we are making our own – from scratch – from SA barley. This means we will have complete control over our final product flavour profile, but also means we have given ourselves loads of extra work to do (which is fun 😀).

We’re going ALL IN on our first release. It is truly going to be special. The last thing on earth we wanted to do for our first gin was to release something average. So we’ve been making sure everything is of the highest quality and purity. No corner cutting to save costs, and no sacrificing on the flavour we want to deliver. And we want to deliver a gin that encompasses everything we are passionate about.

So, here we go, the last pieces of the puzzle are coming together in the next few weeks. We trust you will love our Signature Gin.
